Jackfruit Banana Cake

  • 2 cups refined flour
  • 1 cup jackfruit finely chopped
  • 1 cup golden raisins
  • 1 cup cashews
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cardamom powder
  • ½ cup sugar
  • 2 ripe bananas
  • ½ cup melted ghee
  • 1 or 2 cups warm milk


  • Combine the flour, baking soda, chopped jackfruit and mix well. Season this with sugar, cardamom powder and black pepper powder. Add the ghee to the bowl, and whisk. Slowly add milk while whisking. Make a smooth batter and ensure it has no clumps.
  • Grease the cake tin or dust the tin with some flour and pour in half the batter. Then arrange the cashews and raisins to form a layer. Chop the bananas fine and add them to the remaining batter. Pour this into the baking dish, and sprinkle over some cardamom or cinnamon powder.
  • Bake this cake for 20 minutes at 165°C. To give the cake some colour, bake it at 200°C for about 2-3 minutes. Garnish your cake with powdered sugar or cinnamon powder before serving.
